With a delicious Roulade coupled with Dabur’s Honey Fruit Spread, my Sunday was perfect making a big bowl of Trifle for brunch.

My shoot for a restaurant had just got over and I was beaming with excitement. I was all set to bake and indulge in some festive desserts. Unfortunately, I hurt my back and was forced to rest for more days than I would’ve liked, considering the festive mood and happy vibes all around me.

In fact, I was itching to use the healthy yet delicious Dabur Honey Fruit Spread, which the lovely folks at Dabur, a Science Based Ayurveda Company, had sent perhaps to motivate me to get well quickly.

To enjoy the flavour of exotic berries mixed with pure honey to the fullest, I decided to pair it with a simple lemon sponge. And the best way to enjoy the sponge in a Trifle is to make a Roulade or Swiss Roll. It’s a deceptively simple technique, but fun nonetheless. I thoroughly enjoyed making the roulade. And one can never go wrong with mixing berries and lemon together.

For Lemon Curd, earlier, I used to follow the traditional method of gradually putting butter into the mix over a double boiler. However, one of my mentors showed me another method, which resulted in the best Lemon Curd I have ever had. Since then, I follow his method. He would mix everything in a bowl all at once and cook the mix later. The curd thickens while its kept aside for cooling.

Topped with fresh fruits and whipped cream, the bowl of Trifle was finally ready to be devoured.

What I loved about the Trifle was the Roulade, filled with the honey fruit spread. The spread, owing to real honey and chunks of berries, is rich in minerals and anti-oxidants, while containing no added sugar or food colour, things I like about my jams.

So, if you’re looking for a recipe this festive season, that’s simple, yet gives you a delicious dessert bowl, give the trifle a shot.

How to make Trifle?

First, make Lemon and Berries Roulade

Ingredients for Roulade:

Name of Ingredient Quantity
Flour 75 grams
Sugar 75 grams
Eggs 3
Baking Powder ¼ Teaspoon (TSP)
Lemon Essence ½ TSP
Vanilla ½ TSP


  • Preheat the oven at 120 Degree Celsius.
  • Sift the flour and add baking powder into it.
  • Separate egg whites and yolk in tow different bowls.
  • In a bowl, beat egg whites until soft peaks. Slowly and gradually add sugar. While you add yolks into the mix, keep beating.
  • Once the eggs and sugar are beaten properly, add flavours – lemon and vanilla.
  • Add dry ingredients into the mix and fold the batter gently. Do not overbeat.
  • Spread the batter in a greased, lined baking tray. Don’t overwork or else you will lose the aeration.
  • Bake it for 10-15 minutes.

Make the Roulade with Dabur Honey Fruit Spread: Exotic Berries Jam 

  • Once you sponge is out of oven, sprinkle icing sugar on it and roll while it’s hot. This will help the sponge roll easily and prevent breaking. Roll it tightly, keep it covered in parchment paper and keep it to cool.
  • Once set, open it and apply Dabur Honey Fruit Spread – Exotic Berries on the entire surface. Make sure you fill the inner most side with big spoonful of the spread. It will spread while you’ll roll the roulade.
  • Cover the roulade in the parchment paper and refrigerate it.
  • Cut slices of the roulade, once set properly.

Second, make Lemon Curd:

Ingredients for Lemon Curd:

Name of Ingredient Quantity
Egg Yolks 8
Sugar 1 Cup
Lemon Zest 1 TSP
Lemon Juice 1/3 Cup
Butter 1 Cup


  • In a bowl, mix egg yolks, sugar, lemon juice and lemon zest.
  • Mix it in a bowl over a pan with simmering hot water.
  • Add butter and whisk, till the butter melts. When they mix forms bubbles, take it off the heat.
  • Keep it in a bowl and cover the bowl with cling film. Keep it to cool it will thicken. Give minimum of 1-hour rest.

Assembling the Trifle:

  • In a glass bowl, keep the slices of Lemon and Berries Roulade at the bottom.
  • Fill the bowl with a layer of Lemon curd on top of the roulade.
  • Cut fruits such as Kiwi, Plums and mix them with blueberries. Add fruits to your trifle.
  • Whip some cream and pipe it on top of the fruits. Garnish the Trifle with Blueberries.
  • Serve it cold.
