A simple recipe for Peanut Butter Cookies

Did I tell you how much I loved the Peanut Butter Brownie at Landour Bakehouse? It was perhaps the best dessert I had in Mussoorie. The soft, gooey brownie had a strong and prominent flavour of Peanut Butter. I guessed that they used peanut butter from the famous A. Prakash & Co., to make the brownies and the staff confirmed it.

The jams and chutneys by A. Prakash & Co. were ubiquitous in Mussoorie. However, it was their peanut butter that just won me over. The buttery, nutty comforting flavour of Peanut Butter was exceptional. They say, Pt. Jawahar Lal Nehru loved this Peanut Butter and ordered this on a regular basis. One of the best gifts of mountains, I feel, is its local produce. They make brilliant jams, chutnies or butter etc from fresh fruits and milk, without use of any preservatives. The products taste almost home like. While travelling, I usually buy local chutneys, jams and pickles, but, this time the only thing I bought was A. Prakash’s Peanut Butter.

Also, while in Mussoorie it dawned on me that I had never shared a recipe for making cookies. Hence, I decided to use an easy and simple recipe, for making delicious Peanut Butter Cookies, to eat along with a glass of milk or evening tea.

The ingredients mentioned in the recipe are easily available, except Prakash’s Peanut butter. So, you can use any other brand that’s readily available in the market. The method is fairly simple, however you need to cream the butter and sugar together really well. In this small batch you can even use a fork to mix these ingredients together. Secondly, make sure you use tip of your fingers while folding in flour into the wet mix and do it gently. Remember to give enough rest to the dough, at least a minimum of half n hour. This is very important, as otherwise, the cookies will shrink while baking.

That’s it, just follow the simple steps and enjoy the crunchy, nutty and delicious flavour of peanut butter in a cookie.

Butter 50 grams
Breakfast Sugar 50 grams
Brown Sugar 20 grams
Peanut Butter 50 grams
Baking Soda 2 pinch
Baking Powder 1 inch
Flour 50 grams
Vanilla extract ½ Teaspoon
Peanuts (semi roasted) 30 grams

Method:

  • Sift the flour and add baking powder, baking soda into it.
  • In a bowl, cream butter, breakfast sugar, brown sugar until the mix is light in colour and fluffy in texture.
  • Add Peanut Butter and Vanilla extract in the mix and fold it together.
  • Fold the flour and peanuts into the wet mix, gently.
  • Cover the dough in cling wrap and keep it to rest. Minimum 30 minutes.
  • Once properly rested, make the round balls of the dough (make sure they’re all the same size for it to evenly bake).
  • With a fork press the top of the round balls.
  • Put it to bake at 120 Degree Celcius for 10-15 minutes.
  • Keep aside for cooling, before you consume.
