Plum Cake

A month long waiting for Christmas and baking goodies for the occasion is how I spent my December. Yesterday, it certainly was the time to relax. But no Christmas of mine would have been complete without making a plum cake only for my loved ones.

I feel, somehow I always save my best bakes, for the family feasts.

I had soaked, the dry fruits, blackcurrants, cranberries, crystalized ginger and tooty fruity, in rum for an entire month. After preparing the caramel, I took out the other ingredients and prepared the batter.

While the cake lied in the oven, I felt I could use some rest. As I lied down, I realized that Christmas isn’t just an occasion. It’s a feeling of togetherness, happiness and love. We learn to share and spread love by believing and celebrating in the magic of Christmas.

Back to baking, once it came out of the oven, the cake looked perfect. Perhaps, love percolates into everything you do in this magical time of the year.

After we had our meal, we all had our share of the deliciously rich cake. Now the last piece sits pretty on the dining table.

Butter 250 grams
Sugar 200 grams
Flour 250 grams
Eggs 4 no
Baking powder ½ tsp
Caramel colors
Nutmeg powder ½ tsp
Cardamom powder ½ tsp
Clove powder ½ tsp
Cinnamon powder ½ tsp
Rum 100 ml
Tooti fruity 100 grams
Dry fruits 200 grams
Black current 50 grams
Cashew 25 grams

 

METHOD

  •  In a saucepan burn the sugar and water into it to make caramel color.
  • Chop all the dry fruits, tutty fruity, ginger peel, and blackcurrant.
  • Mix all the powdered spices into the fruits.
  • Pour rum into the above mentioned mix. Cover it. Put it into the refrigerator.
  • In a bowl beat sugar and butter together till its light and the color changes.
  • Add eggs into it slowly and gradually.
  • Sift the flour.
  • Add flour into wet ingredients and also add fruit mix. Fold it slowly.
  • Once mixed properly, add caramel color into the above-mentioned mix.
  • Grease the mold, pour the batter and Bake it at 130 Degree Celsius for 50 minutes.

Though, Christmas has come to an end, it has left me with more memories to cherish. I hope it continues to do so, year after year.
