The simplest recipe for moist, gooey and delicious Dark Chocolate & Zucchini Loaf.

Whenever my sister visits Delhi, she hoards up vegetables like broccoli, peppers, and zucchini, to take them along with her, to Dharamsala. Unlike me, she is always ‘trying’ to eat healthy and likes her veggies boiled.

I happened to notice that she had behind left a Zucchini, this time. Well, I decided to make a calorie laden Dark Chocolate Zucchini Loaf using it.

Also, I know for sure, that if my sister were here, she would also choose to gorge on this zucchini covered in chocolate, instead of boiling it. In fact, it would be hard to take away the loaf from her, as she’s a ‘cake monster’.

Anyway coming back to my loaf, I loved the recipe on the blog called The Life She Made and decided to give it a go. To my delight, it was simpler than any other chocolate cake recipe that I have tried. And I was mighty thrilled to be using zucchini in a cake. As the flavour of zucchini is mild, I wasn’t sure how it would change the flavour as a whole. However, I knew it would add moistness to the loaf. I added walnuts in the recipe. Well, because I like walnuts. I always like the combination of Dark Chocolate and Walnuts.

After putting the cake in the oven, I could barely wait to taste it, as I wanted to understand how different it would be from a regular chocolate sponge. Once it was out of the oven, I greedily looked at the cake, as I waited for it to cool down. Meanwhile, I got my Chocolate Ganache ready.

I wasn’t long before I found myself digging into one of the most delicious desserts I have ever made.

I usually like fruit based desserts, but this one just won me over. I couldn’t wait for Gurjas to try it, as he’s perhaps the biggest chocolate fan I have ever come across. When I told him I am going to make a Chocolate- Zucchini cake, he looked baffled. He instantly asked me, “What did I want to ruin? Chocolate or Zucchini?”

Like I mentioned earlier, Zucchini has a mild flavour, the cake didn’t taste of zucchini at all but of Dark Chocolate. However luckily for me, the cake turned out moist, rich and delicious, essentially why zucchini was added in the loaf.

So, Gurjas happily devoured the cake. I believe you give him chocolate in any form and there’s nothing else he needs. I was happy to nail another recipe to make a delicious, rich Chocolate Cake.

Breakfast Sugar ½ cup
Brown Sugar ½ cup
Oil ½ cup
Vanilla Extract 1 Teaspoon (TSP)
Eggs 2
Salt A pinch
Coco Powder ½ cup
Flour 1 cup
Baking Powder ½ TSP
Baking Soda 1 TSP
Cinnamon Powder ½ TSP
Zucchini (Grated) 1 ½ cups
Walnuts (optional) ¼ cup

Method:

  • Preheat the oven at 180 Degree Celsius.
  • In a bowl mix Breakfast Sugar, Brown Sugar, Oil, Eggs, Salt, Cinnamon Powder and Vanilla Extract together. Beat until the mixture is completely incorporated.
  • Sieve Flour, Coco Powder, Baking Powder, Baking Soda.
  • Mix wet and dry ingredients gently and make sure there’s no lump.
  • Add Zucchini and Walnuts into the batter stir through. Don’t overbeat.
  • Pour the batter in a greased and lined Loaf mold and bake for 30 minutes.
  • Once the cake is cold, garnish it with Chocolate Ganache.
  • You could also use chocolate Chips in place of Walnuts.
